PINEAPPLE BAKE
Such a refreshing and complimentary dish! What’s particularly nice is that it is gluten free and can be easily adapted to dairy free. You’ll find excuses to make this and it will become a staple since all of the ingredients are commonly stocked (which also comes in handy for those “I forgot to tell you we have to bring something” moments). It pairs especially well with Chicken Luau and Coconut Rice and is a scrumptious life saver as a snack or dessert when entertaining unexpected visitors.

INGREDIENTS
2 can crushed PINEAPPLE, including the juice
4 EGGS, beaten
1 1/3 cups SUGAR
4 Tablespoons CORNSTARCH
1 teaspoon CINNAMON
3-4 Tablespoons BUTTER, in evenly sliced pieces
DIRECTIONS
Grease 9 x 13 baking dish and preheat the oven to 350 degrees.
Mix all ingredients, except the butter, in a large bowl.
Pour the mixture into the baking dish and evenly dot with butter, if using.
Bake for 1 hour until lightly crispy and the casserole is gently bubbling under the edges.
Enjoy warm or cold. See notes for serving and topping suggestions.
Refrigerate any leftovers.
NOTES/VARIATIONS
This recipe halves or doubles easily.
To make diary free, omit the butter topping. You can also substitute drizzled macadamia nut oil or coconut oil.
Choose non-GMO cornstarch and organic, if available.
This makes an excellent side dish including but not limited to ham, pork, shrimp, seafood, chicken (such as Chicken Luau), eggs, french toast, or eaten as a dessert. It pairs well with ice-cream, yogurt, cold or warm Coconut Rice or rice pudding, and cakes. It’s also delicious all by itself!
While it doesn’t need nor does it call for toppings, adding chopped pecans (properly prepared), macadamia nuts, shredded coconut, coconut cream, shredded cheddar cheese, crushed crackers or potato chips (choose ones prepared in coconut or olive oil), crumbled sugar cookies, and/or maraschino cherries.
A couple of bites on its own or following some of the suggestions above as a mid-day pick-me-up or a bedtime snack will keep the grumblies at bay and is a much healthier choice compared to processed foods.
